Nourishing Comfort Food: Afghan Quinoa/Rice Recipe

INGREDIENTS:
Cook 2 cups brown rice or quinoa

Heat a bit of coconut oil into a pan and add:
1 large diced onion and 3/4 cup chopped raisins (1 cups if you prefer sweeter rice)
Then add 2 to 3 diced garlic cloves, some grated or finely chopped ginger and simmer for a minute or two

Sauté the above until onions are cooked and the add your spices:
Cinnamon
Ginger
Turmeric
Cardamon
Garma masala
Nutmeg
Anise seeds (optional)

To the above mixture add your cooked rice and shredded raw carrots
You can also add diced celery
